This coffee won fifth place at the Colombia Washed Coffee Festival, which was held during our visit in April 2025. This is a coffee from the same producer that was released last year, and we are very pleased to be able to introduce this lot that achieved such an outstanding result.
This coffee is characterized by its juicy acidity like oranges and rich sweetness like papaya. As the temperature drops, the acidity subsides, revealing a vibrant, tea-like flavor. Carlos Soto is a young producer from a family that spans three generations of coffee growers, and he is committed to improving quality. His Finca Monserrate farm, inherited from his grandfather, is located at an altitude of 1,810 meters and cultivates Cenicafé, Castillo, and Colombian varieties. Carlos consistently produces high-quality coffee and contributes to the region's reputation by constantly reviewing and improving the process. His processing method is simple: after harvest, the cherries are rested for 20 hours before being pulped and fermented without water for 30 hours. They are then washed and dried for approximately two to three weeks.
