This coffee is characterized by its juicy orange-like acidity and honey-like sweetness.
As the temperature drops, the flavor changes to a refreshing sweetness like green apple and a calming taste like cocoa nibs.
Elgüel Guamal Farm is located in the El Tablon community of San Agustín, Huila Department, Colombia. It is a small farm with a total area of 2 hectares at an altitude of 1,650 meters. It was purchased by Segunda Gómez and her husband, Jesus Antonio Guerrero, in 1991 and has been growing coffee for over 30 years. Currently, approximately 8,000 Caturra coffee trees are cultivated, and a careful washing process is carried out, with an emphasis on picking fully ripe cherries.
The cherries are rested for 12 hours, then dry fermented in tanks for 24 hours, then transferred to semi-parabolic dryers where they are dried for 15 to 25 days.
Although Segunda did not originally have any experience in agriculture, she established the farm with her husband and has worked hard to improve quality while learning about cultivation and processing from scratch. Currently, she has no intention of passing the farm on to her daughters who live in the city, and as she has gotten older, she has given up some of the farmland, but her goal remains "to always grow good coffee," and she wants to work with buyers and exporters who understand the value of that coffee.
