Although they are a small-scale operation, they actively educate their farmers, teaching them precise harvesting methods that allow them to pick only ripe red cherries, contributing to improving quality. After harvest, the cherries are carefully selected in a dedicated drying station and then carefully dried on raised African beds for 21 to 28 days. This thorough process produces coffee with complex and clean flavors.
