[Production background]
This lot was produced in the Lalesa region, known for its dense semi-forest vegetation and considered one of the best coffee-producing areas in the Gedeo region. It was processed at a wet mill owned by Alemayehu Tilahun. Alemayehu began his career in the coffee industry nearly 20 years ago and established his own washing station in 2018. He has now established relationships with many surrounding farmers who provide him with cherries. Cherries are hand-harvested and hand-sorted. The selected cherries are then pulped using a disc pulper. The pulper is designed to grade the cherries into high-quality G1 and low-quality G2 based on density. The coffee is then submerged in tanks for an average of 72 hours before being graded again in a channel. This repeated sorting process ensures that only the densest, highest-quality beans are separated into premium lots.
Kelloo: Kelloo is a uniquely named Ethiopian flavor category by Nordic Approach. It means yellow in the Oromifa language and represents flavors of yellow tropical fruits, florals, peach, and stone fruits.
