About Los Azahares

Los Azahares Farm, operated by Juan Jimenez Giron, is located in the Sibactel community within the municipality of Tenejapa, in the Tzeltal highlands of Chiapas. In this land, blessed with a cool climate at around 1,600 meters above sea level and abundant rainfall, coffee is cultivated alongside the surrounding forest.

Around two-thirds of the land is maintained as coffee fields protected by forest and shade trees, while the remainder is used as milpa to support the family’s food needs. Within this environment, where nature, daily life, and labor are closely connected, a flavor unique to this land is formed.

Community & Context

In this region, daily life is shaped by the community’s usos y costumbres— a system of customary practices and local self-governance. Language, land, and labor are woven together into a shared rhythm, and coffee production is sustained as part of the life of the community.

Around 90 Tzeltal producers are connected through the Beneficio Comunitario Sibactel, where cherries harvested in the highlands are carefully processed. While facing realities such as low productivity and price volatility, they remain deeply rooted in this land, continuing to protect both quality and livelihood.
