About the Producer
Carlos Soto is a young producer from a family that has been producing coffee for three generations. We have a strong commitment to improving quality. Finca Monserrate, the farm he runs, is a farm he inherited from his grandfather and is located at an altitude of 1,810m.
By reviewing and improving our processes daily, We produce high-quality coffee consistently, It also contributes to improving the reputation of the region.
Process
After harvesting, the cherries are left to rest for 20 hours before being pulped. Fermented for 30 hours without using water. It is then washed with water and left to dry for about 2 to 3 weeks.
