[Recipe/Pairing]
Drip (for 1 cup): 14g powder, 250g hot water
This coffee is made from Sidra coffee beans grown at an altitude of 1,500 meters in the Pichincha region of Ecuador. It features a sweet, delicate acidity reminiscent of fresh apples, complemented by the refreshing herbal aroma that is unique to Sidra coffee. As it cools, flavors of dried orange and honey emerge, creating a complex and balanced taste. It pairs exceptionally well with citrus desserts and herbal sweets. We particularly recommend pairing it with chocolate with orange peel or baked goods made with honey. For breakfast, pair it with granola with nuts or buttered toast for an even richer flavor.
[Production background]
This lot was produced at the La Carolina farm in the Pichincha region of Ecuador. The farm owner, Fausto Loma, originally worked as a dairy farmer but switched to coffee production seven years ago. He was inspired to try his hand at coffee cultivation after receiving some Ecuadorian Sidra berries from his uncle.
Fausto continues to cultivate the unique Sidra variety with a focus on quality, and won 14th place in the Ecuador COE in 2023. His farm is 3 hectares in size, and together with his family, he carefully cultivates and processes the coffee in a washed process to produce high-quality coffee.
[Regional characteristics]
The Pichincha region is one of Ecuador's finest coffee-producing regions. The high altitude, cool climate, and fertile soil produce coffee with rich flavor. Here, farmers maintain traditional methods and produce high-quality specialty coffee in a sustainable manner.
