Story
This coffee was processed at Girma Moges Washing Station, located in the Hambela area of Guji, southern Ethiopia.
The region sits at a high elevation of 1,800–2,200 meters above sea level. With a wide temperature difference between day and night, the coffee cherries mature slowly, developing deep sweetness and complex flavors.
The producer, Addis Nega, manages a farm of around 5 hectares. The coffee trees are still young, around six years old, giving this farm great potential for further quality improvement and unique flavor development in the future.
While Addis also works with various experimental processes, this lot returns to a more traditional approach, carefully prepared through the natural process.
About Hambela
Hambela is located within Guji, one of Ethiopia’s well-known regions for high-quality specialty coffee. Blessed with rich natural surroundings and high altitude, the area is known for producing coffees with bright fruit notes and floral aromatics.
Because of the large temperature difference between day and night, the cherries ripen slowly over time. This helps create flavors reminiscent of blueberry and cherry, tea-like aromatics, and the expressive sweetness often found in natural process coffees.
This lot expresses the elegance and fruit-forward character of Ethiopian coffee, while offering a beautiful balance of sweetness, spice, and aroma.
Processing
Fully ripe coffee cherries are carefully hand-picked and then spread in thin layers on African beds, where they are slowly dried for around 15 days.
During the drying process, strict sorting is carried out repeatedly to maintain quality. The cherries are also turned regularly to ensure even drying.
The process is completed when the moisture content reaches 11.5–12.0%. This careful natural process brings out the coffee’s fruit-driven sweetness, layered aromatics, and complex character.
Tasting Notes
The cup opens with juicy and sweet-tart notes reminiscent of blueberry and cherry.
As you drink, an elegant Earl Grey-like aroma spreads gently, followed by a delicate cardamom-like spice as the temperature cools.
It has the sweetness and complexity of a natural process coffee, while remaining clean and not too heavy. A beautifully expressive cup with the floral and fruit-forward character Ethiopia is known for.
Recommended Brewing
We recommend brewing this coffee with a paper filter to highlight its blueberry and cherry-like fruit notes, as well as its elegant Earl Grey-like aroma.
For a brighter and cleaner cup, aim for a slightly shorter extraction time.
To bring out more sweetness, body, and the cardamom-like spice, try extending the extraction slightly for a rounder and more layered cup.
