A coffee with gentle apricot-like fruitiness and smooth vanilla-like sweetness. As the cup cools, ripe raisin-like notes and a warm cinnamon-like finish become more expressive.

Highlights

This washed Pacamara lot is produced by Emerson Vasquez in La Palma, Chalatenango, El Salvador. Grown at 1,500–1,600m in a mountainous area, the cherries develop rich organic acidity and complex flavor through the large temperature difference between day and night. The cup offers soft sweetness and depth, with notes of apricot, raisin, vanilla, and cinnamon.

About Emerson Vasquez

Emerson Vasquez runs Finca El Trigalito together with his father, Miguel. The farm is located in the San Fernando area, just outside La Palma in Chalatenango, El Salvador.

Situated in a quiet mountainous region close to the Honduran border, the coffee is grown in a mystical forest about 30 minutes away from town. This natural environment gives El Trigalito coffees their calm character and layered depth.

About Finca El Trigalito

Finca El Trigalito sits at an altitude of 1,500–1,600m, where the temperature changes greatly between day and night. This environment brings bright organic acidity and a complex, three-dimensional flavor profile to the coffee.

Under Miguel’s careful farm management, this coffee is processed using a traditional washed method while still expressing powerful flavor and a clean, transparent cup quality.

Varieties & Philosophy

Today, Finca El Trigalito cultivates representative Salvadoran varieties such as Pacamara, Geisha, and Cuscatleco. By respecting the character of each variety, the farm focuses on creating coffees that reflect both the local environment and careful cultivation.
