About Hambela, Guji
This coffee was processed at Girma Moges Washing Station, located in the Hambela area of Ethiopia’s Guji region.
The area sits at an elevation of 1,800 to 2,200 metres and experiences significant temperature differences between day and night.
These high-altitude conditions allow the coffee cherries to mature slowly, helping develop pronounced sweetness and a complex, aromatic cup profile.
About Addis Nega
Producer Addis Nega manages a coffee farm of approximately five hectares.
The coffee trees are relatively young, at around six years old, offering exciting potential for further improvements in quality and changes in flavour as the farm continues to develop.
Addis regularly explores experimental processing methods, but for this lot he returned to a traditional natural process, carefully expressing the character of the region and variety.
Processing
Fully ripe coffee cherries are selectively hand-picked before being spread in thin layers on raised African beds.
During drying, the cherries undergo repeated and rigorous sorting to remove any defects. They are dried slowly for approximately 15 days and turned regularly to ensure an even drying process.
The coffee is carefully finished at a moisture level of 11.5 to 12.0%.
This precise process creates the rich sweetness of blueberry and cherry, together with a clean and elegant finish.
