About This Tasting Set

OC³, or Osaka Coffee Cupping Club, is a community of Osaka-based roasters who openly exchange ideas about roasting, flavor development and coffee evaluation.

For the second edition, all six participating roasters worked with the same green coffee: Peru Fortunato Anampa Catuai, Geisha Washed.

Although the green coffee is identical, its aroma, acidity, sweetness, texture and finish can change significantly depending on the roast design.

This set lets you discover how six roasters interpret and express one coffee in six different ways.

Floral / Cinnamon

The cup opens with a juicy, transparent fruit character reminiscent of Muscat grapes, accompanied by an elegant floral aroma associated with Geisha.

As the coffee cools, deeper blackberry-like fruit notes emerge, followed by a sweet and gently spicy finish reminiscent of cinnamon.

The tasting notes above describe TERRA COFFEE ROASTERS’ interpretation of this coffee.
Every roaster in the OC³ set uses the same green coffee, but each roast may express different aromas and flavors depending on the roast design and brewing conditions.

Producer and Origin Story

About the Producer, Fortunato Anampa

Fortunato Arenas Anampa was born into a coffee-growing family and grew up observing his father’s dedication to the work.

Inspired by that experience, he developed his own passion for coffee cultivation.

Although coffee farming requires a great deal of time and effort, he says that the joy of producing an exceptional harvest makes the work deeply rewarding.

About Finca Tintin

Finca Tintin is an approximately one-hectare coffee farm located in Inkawasi, Cusco, Peru.

Established in 2017, the farm sits at an altitude of 2,400 meters. The region’s diverse microclimates and differences between daytime and nighttime temperatures allow the coffee cherries to mature slowly, developing rich sweetness and complex flavors.

The farm uses environmentally conscious, organic-minded agricultural practices. Through sustainable coffee production, Fortunato is building a foundation that can support his family and future generations.

Ayni: A Culture of Mutual Support

During the harvest season in Inkawasi, local producers work together through a traditional system of mutual support known as Ayni.

This long-established community practice helps producers manage the labor-intensive harvest and collect coffee cherries at the right stage of ripeness.

Harvesting and Processing

Only fully ripe coffee cherries are selectively picked by hand.

Producers carefully examine the color and ripeness of each cherry, harvesting only those in optimal condition. This detailed selection contributes to the coffee’s clean character and rich sweetness.

After harvesting, the coffee is processed using the Washed method, preserving the individual qualities of both Catuai and Geisha.
